Books

Most of the books listed below are dessert books. Although I’d like to eat desserts 24/7, every once in a while I actually have a craving for something crunchy and green. I’ve listed a few of my favorite non-pastry books for the rare moment when you don’t crave chocolate. Note that I’ve put M.F.K. Fisher at the top of the list. In my opinion, she is one of the greatest writers of the 20th century. I can’t think of anyone who married food and writing to such perfection.

Flo Braker Excellent, but relatively unknown author.
Carol Field The Italian Baker.
Maida Heatter Not for the housewife only. I use her books all the time.
V. La Place & E. Kleiman Cucina Rustica and especially Cucina Fresca are fantastic books.

4-Star Desserts.

S. Lukens & J. Rosso The Silver Palate cookbooks and Ms. Lukens two subsequent cookbooks. While the Silver Palate books now seem dated, at the time they were revolutionary for how creative they were. Well worth having.
Bill Neal Biscuits, Spoonbread and Sweet Potato Pie. Out of print I believe, but nice writing as well as some great recipes.
Joe Ortiz His Village Baker books based on their bakery, Gayle’s, in Capitola, California.
Paula Peck The Art of Fine Baking. This book originally appeared in 1961. A hard to find gem.

Paul Prudhomme
Chef Paul Prudhomme’s Louisiana Kitchen. Worth buying for the candied yams recipe alone.
Richard Sax Another sleeper.
Lindsey Shere Chez Panisse Desserts.
Nancy Silverton Anything by her. Superb books.
Patricia Wells Anything by her. Wonderful writer as well.
